Brewed with highly polished rice and cold, delicate fermentation process. This dry, gentle, and fruity sake features a smooth, silky texture, tinged with aromas and flavors of pear, melon, honeysuckle, custard and nutmeg. The finish is clean and refreshing with an emerging taste of lightly salted fruit.

Crafted in Yamaguchi prefecture, Dassai “39” is a skillfully balanced Junmai Daiginjo that brings a rush of fruit flavors to your palate. The rice is milled to just 39%, which gives Dassai “39” its smooth, mellow taste.
This Daiginjo, which is called a Ginjo in the store, is the perfect example of a Niigata style sake known as tanrei karakuchi or light and dry. Great with seared scallop and white fish sashimi.
With a 50% rice-polishing ratio, this Genshu(undiluted) Sake presents an incredible round and smooth taste after 3 years of aging in the snow
